Lamb Curry with Yogurt Recipe

Yogurt in Middle Eastern Style for Lamb

Ingredients

  • 2 lbs. Boneless Lamb, cubed
  • 4 cups Unflavored Yogurt
  • 2 tablespoons Clarified Butter
  • 1 tablespoon Fresh Ginger, minced
  • 4 Green Chili Peppers, chopped
  • 1 large Onion, minced
  • 1 large Onion, sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Mustard, ground
  • 2 teaspoons Turmeric, ground
  • 2 tablespoons Coriander, ground
  • 1 teaspoon Cumin, ground
  • 1 teaspoon Cinnamon, ground
  • Salt to taste

Directions

lamb curry with garnish on a platePlace the ginger, garlic, chilies, spices, minced onion, and yogurt in a food processor or blender. Process until it has mixed well.

Spoon the mixture over the lamb, tossing it to coat it well. Cover well and keep refrigerated for 3-4 hours.

Saute sliced onion with the clarified butter until it becomes translucent. Do not brown them. Add in the lamb as well as the yogurt marinade. Mix them all well, cover and simmer just until the meat has become tender, around 1- 1 ½ hours.

Season the Lamb Curry with Yogurt recipe with salt before serving.

Tips

When you are marinating the lamb, make sure you cut some slight holes in the meat so the marinade and spices will seep deeper into the meat.
